Three simple rules
One — match the weight. Big flavours want a fuller wine; delicate dishes want something light.
Two — acidity cuts fat. Fried dishes and rich cheeses go better with a sharp white than most people expect.
Three — spice hates tannin. Red wine tannins amplify chilli heat. With hot Thai food, a spritz or a beer works better.

Glass versus carafe — where the value is

The break-even is the third glass: three singles come to 690, the carafe is 490 — a 200-baht saving.
Two people — one carafe is right, about a glass and a half each. One person, one glass — the single is better value. Four people — two carafes at 980 gives about six glasses, against 1,380 for six singles.
White or red
Both the glass and the carafe come in either, at the same price.
White suits — oysters 270, burrata 390, every salad, all the fish 390–490, olive-oil and cream pastas, pizzas without red meat, and anything fried.
Red suits — wagyu steak 1,590–1,890, ribeye 690, osso buco 580, lamb shank 590, wagyu burgers 360–450, tomato and meat pastas, pepperoni and meat lovers pizzas.

Why spice and red wine fight
Tannins bind to the proteins in saliva, which is what leaves the mouth feeling dry and grippy. Add capsaicin, which is already irritating the same surfaces, and the two compound each other until nothing tastes good.
So with hot Thai dishes — som tam 120, pad krapow 190, tom yum goong 190 — or a diavola pizza at 360, reach for cold beer at 80–140 or a spritz at 280 instead. Both carry sugar and bubbles, which rinse the palate.
If you are not drinking
There is no alcohol-free wine on the list, but several things do a similar job.
- Sparkling mineral water 140 — the bubbles clear the palate between bites, much as a white does
- Heineken Zero 100 / Budweiser Zero 160 / Guinness Zero 300 — genuine 0.0% beers
- Bundaberg ginger beer 180 — non-alcoholic, properly gingery, good against big flavours
- Tonic 50 — quinine bitterness stands in for light tannin
