Easily adapted

Several pastas work without meat and with extra vegetables. So do pad thai and fried rice.

What you must tell us

Many Thai dishes are built on fish sauce and shrimp paste without saying so on the menu. If you are strictly vegetarian or vegan, say so when ordering and we will switch to soy.

Saying "no meat" is not always enough — the kitchen reads that as leaving the meat out.

Vegan

Without dairy, what remains is the vegetable, rice and fruit group — pad pak boong 130, vegetable spring rolls 120, garden salad 230 (hold the cheese), fruit mix 120.

The All'Arrabbiata at 320 works vegan without the cheese on top.

Dishes that look vegetarian but are not

Pad phak khana nam man hoi 160 — oyster sauce is made from oysters.

Som tam thai 120 — the standard recipe carries dried shrimp and fish sauce.

Pad pak boong 130 — usually made with fermented soybean paste and fish sauce.

Gnocchi 320 — the nduja is pork.

Rigatoni alla Norma 320 and orecchiette 320 — finished with parmesan, which is traditionally made with animal rennet.

All of these can be changed. Just say so.

The words to use

"Vegetarian, no meat of any kind" — the kitchen removes the meat, but may still cook with fish sauce.

"And no fish sauce or shrimp paste" — you have to add this. A Thai kitchen treats both as seasoning rather than as meat.

"Jay" — the Thai term is stricter than vegan: no meat, no dairy, no egg, and none of the five pungent vegetables (garlic, onion, shallot, chives, tobacco leaf). Do not use it unless you mean it.

Clearest phrasing in English: vegetarian, no fish sauce, no shrimp paste.
